
I haven’t really felt like baking these past few days. Or maybe it has been weeks.
So, instead of baking I decided to pick up a book and read a little. I came across these mystery books, where the main character owns a bakery {and solves murders in her free time}. It is hard to read a whole chapter about Blonde Brownies without wanting to get off the couch and make some myself.
So I did. Literally. I put my bookmark in my book and ran to the kitchen.
The book includes recipes, but they aren’t Gluten Free. So I made a few changes…. and here we are.
Chocolate Chip and Walnut Blondie Bars {Gluten Free, Dairy Free}
Recipe: Chocolate Chip and Walnut Blondie Bars {Gluten Free, Dairy Free}

Ingredients
- 2 cups light brown sugar {or 1 cup dark brown sugar, and 1 cup white sugar}
- 1/2 cup canola oil
- 2 eggs
- 1 teaspoon vanilla
- 1 1/2 cups Gluten Free Flour Mix {I use a superfine brown rice flour mix}
- 1 1/2 teaspoon salt
- 1/2 teaspoon xanthan gum
- 2 teaspoon baking powder
- 3/4 cup chopped walnuts
- 1 cup dairy free chocolate chips {Semi-Sweet Ghirardelli}
Instructions
- Preheat the oven to 350°. Line a rectangular baking pan {9×13} with tin foil and lightly spray.
- Combine brown sugar and oil in a bowl.
- Add in the eggs and vanilla and mix well.
- Combine the flour, salt, xanthan gum, and baking powder in a small bowl.
- Slowly add dry ingredients to the wet ingredients, making sure to stir in-between each addition.
- Add in the chocolate chips and chopped walnuts.
- Spread the mixture into the prepared pan.
- Bake for 25mins.
- Let bars cool before serving – which is near impossible!

This weekend, I read a Rachel Ray magazine. Half way through my stomach was rumbling from the descriptions of all the yummy food.
I read that Rachael Ray Mag too. I was hungry and ear marking a lot of the pages. I think I read it over and over..and then finally got up and had a snack.
Our mind does put the rest of our body into motion, just reading about food, mind tasting the food, we need a fix.! After making this delicious looking blondie bar I can see you sitting down with the book in one hand, coffee ready piping hot, and the comfort of a brownie or two. At least for one chapter! Those bars look so good!! I’ve never baked with brown rice flour, but I do have some almond flour. Bet this recipe would be good with almond flour and chopped almonds instead of walnuts. I might have to try it.

I made these brownies, however, I substituted oatmeal for the walnuts as my son doesn’t like them. Mmmmmm… they are amazing!!! One questions, do they need to be refrigerated???
They dont HAVE to be refrigerated, but in the summer I do tend to throw stuff in the fridge to keep in from going bad. I love the idea of oatmeal in place of the walnuts. Glad to hear you liked them!!!!!!
