
I am still celebrating Maple Syrup season {although it is shortly to come to an end}.
The jug of pure Maple Syrup is taunting me from the fridge.
Most days, I waver between three things:
1) wanting to drink spoonfuls of syrup
2) wanting to eat stacks of pancakes with puddles of syrup
3.) wanting to bake something with syrup swirled in it
Today I chose to do #3. Bake.
Gingerbread Whoopie Pies with Maple Syrup {Gluten Free, Dairy Free}

The whoopie pie is a fan favorite.
Maybe it is because whoopie pies are like eating a piece of cake with frosting…except the whoopie pie is more easily portable than your standard cake.
Maybe it’s just because the whoopie pie is cute.
A reader {Shirley} wrote in and said that the Maple Syrup Frosting would be great as a filling to a whoopie pie. And I agreed.
Here is is.
Recipe: Gingerbread Whoopie Pies with Maple Syrup {Gluten Free, Dairy Free}
Ingredients
- ½ cup GF Flour mix {I use a Superfine Brown Rice Flour Mix}
- 1 ½ teaspoon xanthan gum
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- ½ teaspoon cloves
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ cup oil
- ½ cup brown sugar
- 2 eggs
- 1/3 cup molasses
- ½ cup buttermilk (Dairy Free, I made my own using Soy Milk and lemon juice)
- 1/4 cup Spectrum Shortening
- 1 1/2 cup Powdered Sugar
- 4 tablespoon Maple Syrup
Instructions
For the whoopie pies:
- Preheat oven to 350°. Line a baking pan with parchment paper.
- In a mixing bowl, combine flour, xanthan gum, ginger, cinnamon, cloves, baking soda and salt. Whisk to combine.
- Combine the buttermilk with the molasses in the liquid measuring cup.
- In the bowl of a mixer, combine oil, brown sugar and eggs until smooth. Add the flour mixture to the mixer, alternating it with the buttermilk mixture. Mix until combined.
- Scoop the dough with a tablespoon cookie scoop {or a spoon} onto the prepared pan. Flatten or spread out the dough a bit if it is sitting in a large mound on the pan. {This makes whoopie pies that are about 2 1/2 inches wide.}
- Bake for 8-10 mins.
- Let whoopie pies cool completely before assembling.
For the Filling:
- Combine the shortening, powdered sugar, and maple syrup in the mixer until a thick frosting forms. Add more maple syrup if you prefer thinner frosting, or more powdered sugar for a thicker frosting.
To Assemble:
- Sandwich two whoopie pies together with frosting in the middle. {Wait until the whoopie pies have cooled completely, or the frosting will slide}
- Wrap each whoopie pie in plastic wrap to maintain freshness.

I love Whoopie Pies! I grew up in Maine, and Whoopie Pies and Deviled Dogs were common. Deviled Dogs are chocolate with filling like a Whoopie Pie, only shaped like a hotdog. I’ve never tried a Gingerbread one, and will definitely try this recipe.
These look really good! I’ve never made whoopie pies, but now I want to try.
My sister is currently living in Quebec and when I lasted talked to her she told me about going to a place where every dish had maple syrup in it. I was so jealous!
I imagine that the added maple puts these whoopie pies over the top!
