Last weekend we went to a few maple syrup houses {sugar shacks} to soak up the smells, drink up the syrup, and support some local farmers.

The “shacks” that the maple syrup is made in are not really shacks most of the time. Many are outfitted with tables and kitchens so that they can host pancake breakfasts.  This one {below} had a beautiful stained glass window of a maple leaf {and had the BEST maple syrup cotton candy!}.

But I digress.

I came home with supplies of maple syrup, maple cream, maple candies, and a desire to BAKE.

And here’s something I came up with:

Brown Sugar Cake with Maple Syrup Frosting {Gluten Free, Dairy Free}

Ingredients

  • 1 cup Gluten Free Flour Mix (I use a superfine brown rice flour mix)
  • 1/4 cup Sweet Rice Flour
  • 1 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 3/4 teaspoon Xanthan Gum
  • 1/4 cup plain Applesauce
  • 1/4 cup Oil
  • 1 cup Brown Sugar
  • 2 teaspoon Vanilla
  • 2 Eggs
  • 1/4 cup Spectrum Shortening
  • 1 cup Powdered Sugar
  • 4-5 Tablespoon Maple Syrup

Instructions

  1. Preheat oven to 350°. Grease a 8 inch square pan with cooking spray.
  2. In a bowl, whisk together the flours, baking powder, salt and xanthan gum.
  3. In the bowl of a mixer, combine the applesauce, oil, brown sugar and vanilla.  Add in the eggs, one at a time, mixing well after each.
  4. Add the dry ingredients to the wet ingredients and mix well.
  5. Spread the batter into the prepared pan. Bake for 30mins.
  6. Remove and let cool.
Frosting:
  1. Combine the shortening, powdered sugar and 4 tablespoons of maple syrup in the bowl of a mixer.
  2. Mix until the frosting is fluffy.  Add the additional 1 tablespoon of maple syrup, if needed, to get the correct consistency.
  3. Spread the frosting over top of the cooled cake.

Variations

If you have access to “Maple Cream”, spread that on top of the cake in place of the Maple Syrup Frosting. It is DELICIOUS!
