Something about a donut just screams “FUN” doesn’t it? Is it the shape? Is it the gobs of frosting that usually are slathered over top? I don’t know what it is, but I know that my kids love donuts, and they were cheering for me when they saw these come out of the oven.
Remember the Berry-Blue Blueberry Muffins recipe from a few weeks ago? {If not, check them out because they are DELICIOUS}. I wanted the same yummy blueberry flavor but in a donut form, so I created this twist on my muffin recipe.
Berry-Blue Donuts with Lemon Glaze {Gluten Free, Dairy Free}
Mix up a batch of Berry-Blue Blueberry Muffins. Instead of scooping the dough into a muffin pan, scoop it into a greased donut pan. {Don’t have one? Look here, or here}. Bake the donuts at 350° for 10-12 mins {or until they spring back when touched}. Let cool while you mix up the lemon glaze.
Mix powdered sugar with a few splashes of lemon juice concentrate until you have the desired consistency. Pour, spread, slather, drizzle….over the top of your donut.
Then, wait for the cheering.

There IS something about the shape of donuts, isn’t there? Maybe because it’s something you always assume you can only buy at a store, so when someone actually makes them from scratch, it seems like a miracle! I would love to get a donut pan. Then I could impress my friends with these.
