Need a sweet treat for your special Valentine? Having a party for your kids and want to surprise them with some yummy treats? Like cookies, and want a reason to make a batch? Then look no further.
Sugar Cookies with Strawberry Frosting {Gluten Free, Dairy Free}
I knew I wanted to make round cookies, but didn’t really want to deal with cookie cutters. So, after I made the dough, I rolled it into logs {wrapping them first in wax paper, and then in plastic wrap, making sure the ends are closed}. I put them in the fridge to chill. When I was ready to bake the cookies, I pulled the logs out and sliced them. Easy as can be. Then popped them into the oven to bake.
{Side note: I am planning on making up some of these cookie dough logs and putting them in the freezer just to have on hand. Then, when I need a last minute treat, I can just pull them out and have cookies ready in no time!}
I then made up a batch of strawberry frosting {YUM}.
After that, it was decorating and sampling {and picking sprinkles up off the floor}
To make dough logs: separate the dough into 2 balls. Place one ball on a sheet of wax paper. Roll it into a log. Wrap the wax paper tightly around the dough. The wrap entire log in plastic wrap, ensure that the ends are enclosed. Repeat with the second ball of dough. {this will make round cookies that are about 2″ wide. If you desire larger cookies, make one large log of dough.}
Place the rolled dough into the fridge to cool.
Preheat the oven to 350°. Take cookies out of fridge and slice {about 1/4″ wide}. Place on slightly greased cookie sheet. Bake for 8-10 mins.
Strawberry Frosting Recipe - “Cooking For Isaiah”, Silvana Nardone
1/2 cup palm oil shortening {spectrum}
1 1/4 cups powdered sugar
1/4 cup strawberry jelly
dash of salt
red food coloring {optional, for extra pink}
Mix shortening, powdered sugar, jelly and salt in the mixer until well combined and fluffy.
{Add a few drops of red food coloring to make the color even more pink!}

I already have a stellar cookie recipe, but I always felt like my frosting recipe was lacking. It never looked as pretty or yummy as yours. I am definitely going to try out yours this weekend.

Thanks! I can’t believe I haven’t tried rolling the dough into a log before this. It was easy and MESS free. I do like using cookie cutters, but this is nice when you are in a rush and NEED a cookie. hahaha

Yes, you can find gluten free flour and ingredients at most grocery stores. Look in the “natural” section if there is not a clear “gluten free” section.
One other idea is that you can just make these cookies using your regular sugar cookie recipe {and not make them gluten free}. Just use the frosting and sprinkles idea from above.
I don’t think I could eat just one of these. The icing looks amazing.
