
Waffles really shouldn’t be locked into the breakfast category anymore. They are just too good to eat only in the morning. At our house, we often eat them for dinner, and sometimes we even have them for lunch. Gasp!
This waffle recipe could basically be a dessert. Its warm, sweet and chocolaty. Did I mention the marshmallow cream sauce?

I stumbled upon a wonderful recipe for S’mores Pancakes in Silvana Nardone’s cookbook “Cooking for Isaiah”. I combined that with a waffle recipe I had already been using, from Carol Fenster’s “1,000 Gluten Free Recipes”. And that brings us here: a mash-up of two wonderful recipes into one delicious creation.
S’mores Waffles with Marshmallow Cream {Gluten Free, Dairy Free}

S’mores Waffles with Marshmallow Cream (PRINT RECIPE)

2 cups Gluten Free Brown Rice Flour mix
2 tablespoon brown sugar
2 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon xanthan gum
2 cups milk (any kind: soy, rice, almond, etc)
2 eggs
1 tablespoon molasses
1 tablespoon honey
2 tablespoon oil
½ cup chocolate chips {Ghirardelli semi sweet}
1 cup Fluff Marshmallow
4 tablespoon hot water
To make the waffles:
Whisk together the flour, brown sugar, baking powder, baking soda, salt and xanthan gum in a bowl.
In a separate bowl: combine the milk, eggs, molasses, honey, oil. Whisk well to ensure that all the ingredients are well combined.
Add the wet ingredients to the dry ingredients and mix until combined. Add in the chocolate chips.
Heat your waffle maker to medium heat. Spray the waffle iron with cooking spray. Spread 1/2cup of batter into each waffle square. {If you aren’t using a Belgian Waffle maker, add less batter to each square, to ensure it doesn’t run over.}
Cook the waffles until brown and crisp. Remove from the waffle maker.
To make the Marshmallow cream:
Mix the Fluff and hot water in a bowl. Whisk well to combine, until a smooth sauce forms.
Pour the Marshmallow cream sauce over the waffles. Add extra chocolate chips if desired.
