
Normally I steer towards chocolaty desserts, but every once in a while I get a craving for something fruity. I had in mind something with pear, something with gingerbread, and something that I could flip! So what did I craft for this very specific craving:
Gingerbread Pear Upside-Down Cake {Gluten Free, Dairy Free}
The recipe itself was really straight forward. Sprinkle brown sugar on the bottom of a greased pan. Lay sliced pears on top of the sugar {in a pinwheel layout}. Pour the gingerbread cake batter on top.
Then bake:

The gingerbread cake is fluffy and flavorful.
Once the cake has cooled for at least 10mins, place a serving tray or dish on top of the pan.
Then FLIP!
The pears have a nice brown sugar glaze which coats the entire cake and serves as a frosting of sorts.

I made my own buttermilk using Soymilk and lemon juice.

Thank you for this recipe! I made it tonight for our octet practice. We’re called the ‘Ginger Snaps’ so I wanted to make something with the pears I had in my fridge and ginger, of course! I used only 1/2 cup of sugar for my topping but added 2 Tbsps of butter and 1 Tbsp of cocoa.
In the cake I omitted the 1/2 cup brown sugar and used just the 1/3 cup molasses. I served it with whipped cream and everyone loved it!
