Peanut Butter Chocolate Chip Brownies {Gluten Free, Dairy Free}


6 Tablespoons oil

3/4 cup brown sugar, packed

1/4 cup granulated sugar

2/3 cup peanut butter

2 eggs

1 teaspoon vanilla

1 cup Gluten Free All Purpose Flour {I used a brown rice mix}

1 teaspoon xanthan gum

1/4 teaspoon salt

3/4 cup chocolate chips {Ghirardelli semi sweet}

1/4 cup chopped peanuts, small pieces {optional}

Preheat oven to 350°. Line an 8-inch square pan with foil, allowing foil to hang over the edges.

Mix oil, brown sugar, white sugar, and peanut butter in a bowl until well combined.

Mix in the eggs and vanilla.

Add the flour, xanthan gum and salt. Make sure that all ingredients are well incorporated.

Finally, add in the chocolate chips and peanuts {if desired}

Spread batter into the prepared pan and bake for 30mins {until just set}.

Place on rack to cool, then lift foil edges to remove brownies.  Pull off foil and cut into 16 pieces.
